– 250 grams paneer (cottage cheese), cut into cubes
– 1 cup thick yogurt (curd)
– 1 tablespoon ginger-garlic paste
– 1 teaspoon red chili powder
– 1 teaspoon of turmeric powder
– 1 teaspoon garam masala
– 1 teaspoon cumin powder
– 1 teaspoon of coriander powder
– 1 tablespoon lemon juice
– 1 tablespoon of gram flour (besan)
– 1 tablespoon mustard oil (or any cooking oil)
– Salt to taste
– 1 large onion, cut into chunks
– 1 large bell pepper, cut into chunks
– 1 large tomato, cut into chunks
– Skewers
Instructions:
1. Prepare the Marinade: In a large bowl, mix the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, lemon juice, gram flour, mustard oil, and salt. Whisk until smooth.
2. Marinate the Paneer: Add the paneer cubes, onion, bell pepper, and tomato chunks to the marinade. Mix gently to coat everything evenly. Cover and refrigerate for at least 1 hour (or overnight for best results).
3. Preheat the Grill/Oven: Preheat your grill or oven to 200°C (392°F). If using an oven, line a baking tray with aluminum foil and lightly grease it.
4. Skewer the Paneer and Vegetables: Thread the marinated paneer and vegetables onto the skewers, alternating between paneer, onion, bell pepper, and tomato.
5. Grill/Bake the Paneer Tikka: Place the skewers on the grill or the prepared baking tray. Grill or bake for 15-20 minutes, turning occasionally, until the paneer is golden and slightly charred at the edges.
6. Serve: Remove from the grill/oven and serve hot with mint chutney and lemon wedges.
